Soup Stock Tokyo, which opened in SKYARK last December, is a soup specialty restaurant with roughly 60 locations nationwide. One of their signature items that has been on the menu since the restaurant’s founding is the “Tokyo Borscht” (pictured, JPY700); made by sauteing aromatic vegetables for more than six hours to bring out their sweetness and depth and without any added sugar or sweeteners. The Western-style soup overflows with the sweetness of onions and the flavor of beef, and at Iwatake, it is served with Shinshu shimeji mushrooms, Shinshu eringi mushrooms, and mozzarella cheese – a combination exclusive to the Hakuba branch.

The rainy season in the Kanto Koshin region usually starts around June 7th, but is already over a week late this year, and both 6/13 (Thurs.) and 6/14 (Fri.) were sunny. Visitors were slow to turn out, and at HAKUBA MOUNTAIN HARBOR (pictured) around 9:00 a.m., I saw visitors taking pictures with the Northern Alps in the background again and again until they were satisfied with the results since there was no one else waiting. The “Hitotoki Downhill,” a 1.4-km descent from the top of Mt. Iwatake to Hakuba Hitotoki-no-mori, can be done either by mountain cart (pictured left, ¥2,000) or by renting a mountain bike (pictured right, JPY1,500 per ride). This beginner course allows you to ride while enjoying the views of the Northern Alps and the village at the foot of the mountains.

I spoke with a mother living in Hakuba (pictured), who told me, “I love your site! It’s a beautiful day, isn’t it?” After I took a photo of them, she and her two children played tech ball and disc golf (free of charge) and took a guided buggy cruise (*Adults JPY2,000, Children 4 years old to Elementary ¥JPY,000).
