There will be a lot of festivals of new soba which is harvested in October and November in Shinshu. Here is a list of the popular soba festivals of fresh soba of the autumn season.

Nagawa Autumn New Soba Festival … 10/1 (Sun) – 11/5 (Sun) 5 shops in Nagawa Area, Matsumoto City

*The raw buckwheat seeds will be “Gen Soba” (Soba seeds with shells) after drying and husking when they are harvested. The flavor is getting worse as time passes. Now, there is a good cooling system, however, the fresh soba just after harvest is much better!
